California Dreamsicle Soda with Cream Cheese Whip

To Make the Cream Cheese Whip

1. Whip the cream cheese and sweetened condensed milk with a handheld mixer or Kitchenaid until very smooth.
2. Slowly drizzle in the milk.
3. In a separate bowl, beat the whipping cream until medium peaks have formed.
4. Fold the whipped cream into the cream cheese mixture until thoroughly combined and foamy. The mixture should be pourable. Thin mixture with more milk, if necessary, to achieve consistency.
5. Gradually add salt to taste. Reserve in the fridge to spoon on top of chilled drinks

To Assemble the Dreamsicle Soda

1. Fill a cocktail glass with crushed ice until glass 3/4 full.
2. Pour in the syrup.
3. Pour in the club soda.
4. Pour in the heavy cream.
5. Top with Cream Cheese Whip.
6. Add a straw and garnish as desired.

Yield: 20 drinks (120 ml /4 oz. each)
