INGREDIENTS:

Real California unsalted butter, room temperature, as needed
2 slices focaccia bread (or if very thick, 1 slice split open)
2 slices Real California Pepper Jack cheese
2 slices Real California Sharp Cheddar cheese
2 ounces Real California Gouda cheese, shredded

PER ORDER:

1 sandwich

DIRECTIONS:

Butter one side of each slice of focaccia (or outside of each piece of split focaccia). Buttered side down, top one slice of focaccia with jack cheese, cheddar cheese, and gouda, then another slice of focaccia, buttered side up.

Cook in pan on medium, pressing with a spatula for good browning, until brown on both sides. Add a splash of water, cover, and steam until cheese is melted.
