INGREDIENTS:

Brisket Sauce:
-1/4 cup Real California butter
-2 yellow onions, sliced
-3 cloves garlic, skinned and chopped
-3 pounds smoked beef brisket, chopped into cubes
-2 quarts chicken stock
-1 can beer
-2 tablespoons Worcestershire sauce
-2 tablespoons hot sauce
Cheddar Cheese Sauce:
-2 quarts Real California whole milk
-2 cups Real California heavy cream
-3 pounds Real California White cheddar cheese, grated
-10 grams sodium citrate
Garnish:
-French fries
-Sliced green onions
-Horseradish sauce

PER ORDER: Makes 24 servings

DIRECTIONS:

To prepare Brisket Sauce, melt butter in large, heavy saucepan.  Stir in onions and garlic; sweat about 5 minutes until soft.  Add brisket, chicken stock, beer, Worcestershire sauce and hot sauce. Cook, partially covered for 3 hours over low heat, stirring occasionally. Remove from heat and keep warm.

To prepare Cheese Sauce, bring milk and cream to a boil in a large, heavy saucepan.  Remove from heat and stir in cheese and sodium citrate until thoroughly mixed and smooth. Cover and keep warm.

To serve, arrange French fries on serving plate. Spoon over Brisket Sauce and Cheddar Cheese Sauce.  Sprinkle with sliced green onions and a dollop of horseradish sauce.
