Sauce:
1 cup Real California sour cream
½ cup chopped fresh cilantro
½ jalapeño, seeded
2 tablespoons olive oil
Juice of ½ lime
Pinch salt
Pinch pepper
Carne Asada:
1 pound skirt steak, or other favorite
steak
Salt and pepper
Pizza and Garnishes:
20 ounces pizza dough
8 ounces Real California whole milk
Mozzarella cheese, cut into ½-by-
½-by-1½-inch sticks, plus 14 ounces
shredded Real California whole milk
Mozzarella cheese, divided
1 cup crumbled Real California Queso
Fresco, plus more for garnish
½ cup diced tomatoes
½ cup diced red onion
½ cup corn kernels
½ jalapeño, seeded and diced
½ cup chopped fresh cilantro
Cook Time: 8 to 10 minutes, plus time to cook the carne asada
To make the Sauce: In a blender, combine sour cream, cilantro, jalapeño, oil, lime juice, salt, and pepper and blend until creamy.
To make the Carne Asada: Season steak with salt and pepper and grill. Set aside to rest, then slice.
To prepare the Pizza and Garnishes: Preheat the oven to 550°F. Stretch dough to a thin 16-inch round. Arrange Mozzarella cheese sticks around rim, then fold 1½ to 2 inches of dough inwards over cheese to make stuffed crust. Restretch dough to 16 inches and top with shredded Mozzarella cheese, Queso Fresco, tomatoes, onion, corn, and jalapeño. Bake until golden brown, 8 to 10 minutes.
Top with carne asada and garnish with cilantro and additional Queso Fresco.
